The Bon Vivants have tasted many fine Champagnes and Sparkling wines from around the world and this one is the best yet!  Sea Spray is a single vineyard (Sea Smoke Vineyard), single vintage (2011), single varietal (Pinot Noir) sparkling wine from one of the most highly sought after vineyards in the world.  It haunts us in our sleep and appears in dreams! 

This tasting occurred in an outdoor patio setting with the sounds of a Spanish tri-tiered fountain flowing softly in the background and in Riedel Pinot Noir Vinum stemware.  The wine was open air for half an hour.

The appearance exposes it's natural terroir:  soft peach, salmon, and mandarin orange.  It is so clean that one can read through it and exhibits finesse in its appearance.  The fluid up flow of the boules and uniformity showcases craftsmanship and quality.  Their steady stream seduces.

On the nose, with a firm swirl, there is noticeable toast from the French coopers.  Equally proportioned Clementine orange peel and dried apricot create the most intoxicating aromas followed by rich citrus and clove spice.


Then the indulgence - in the mouth, effervescence, full, Oriental silk, lemon bars, sun dried lemons, Sangria soaked orange peels, Bing cherries on the mid and back, followed by balanced acids and steely mineral.  The diatomaceous earth component is not missed and delivers a clean, crisp, heavenly wine.


Recommended food pairing:  Lobster with Coral Cream.  The effervescence and acids cut through the rich creaminess of the Coral Cream and the full bodied richness pairs perfectly with the sweet flavors of the lobster thereby delivering an astonishing explosion of flavors in the mouth.
