First, a brief introduction to real, regional, Sichuan food - this is not American style Chinese food!

This is the authentic multi-restaurant company famous in China - Chuan's.  This is authentic Szechuan/Sichuan cuisine with natural spices that won't kill Americans!  They import the ingredients and the chef's.  On this particular day, we started with the cold dish discussed in the above video:  Ox tongue, lung, heart, and tripe - traditional and outstanding!  We have ordered it upon sitting, prior to opening menus since!  The flavors are indeed powerful, but not overwhelming. 
The beef noodle soup is so delicious that we have arrived at 6pm and have been sent away - sold out!  It is the perfect blend of spices, cilantro, scallions braised beef and beef broth (made of bovine material and bones) with Szechuan red pepper essence.  The noodles are traditional hand made stretched noodles, "slap bang" on the counter top style!  This is perfect on a cold winter's day but so delicious, one can't help ordering it year round!
This is the real sweet and sour chicken - the sweet comes from Chinese mushrooms, carrots, and sweet peppers and the sour from vinegar and orange peel.  All authentic and natural to create the original historical dish.  Served with steamed rice and raw vegetables.
